INGREDIENTS

  • whole chicken

  • 1 medium-sized sweet onion

  • 2 tbs cold unsalted butter

  • 1/4 tsp white pepper

  • pinch of sea salt & cracked black pepper

  • olive oil, drizzle

DIRECTIONS

  1. Preheat your oven to 350 degrees F
  2. Slice your onion into rings and place as a barrier at the bottom of your roasting pot, creating a separation between the chicken and the pot base
  3. Prepare your chicken by washing thoroughly, and using your fingers or a spoon to lift the skin away from the breast meat
  4. Mix together butter, garlic, white pepper, salt and pepper in a small bowl and put half of it underneath the skin, using your fingers to smooth it out as much as you can
  5. Use the rest of the butter mixture to rub the outside of the chicken skin; place into the roasting pot
  6. Drizzle with olive oil; bake 350 degrees until your chicken reached 165 degrees F (depending on the size of the chicken, possibly up to 1 hour)
  7. Let your chicken cool for about 15 minutes while the juices settle once it is fully cooked
